    This is Nevada Jim. Any fish story with danger would most likely include a homeless person jumping in the river to try and steel the fish from me. Plus, there aren't that many varieties of fish that you can find here, as sad as that is. I'm just lucky I'm in basque country, you can find pig, cow, and lamb almost anywhere, and there are more and more breweries popping up around me :)

    First try to do 24hrs sous vide pork belly in Chashu style. Strained and solidify cooking liquid into a jelly. I will have to slice it more evenly next time.

    Cooked a "kobe" ny strip to split with the old man. Had some scalloped potatoes to fill in the cracks. Much to my horror, there wasn't any cream in the fridge at Casa Lucretia, so I had to use half and half for the taters and they weren't as pretty as usual. Tasted ok, tho.

    A Taiwanese specialty dish, "niu rou mian" aka beef noodle soup. Slow braised beef shank & tendon+ beef bone broth + Homemade noodle , Daikon & vegetable.

    Mmmhhh, I had a McD chicken sandwich for breakfast/lunch and Panda Express food for dinner, I think I have room for improvement ;)

  13. Spring pea soup. Very basic....peas, spring onions, stock and cream. Plus bacon....
