The carter suji and the watanabe sakimaru are my most eye catching knives. My favorite right now might be the old forgecraft that son gave me. Del Ealy just thinned it and now it is performing so well, I can't keep it out of my hands!

if you keep a rubber band on for more than a day it dries your handles out super bad! i usually keep one on at work for a little more grip on my board, I work off of a small 1 foot tall board right now on my low boy.

mike henry made the handle for my carter. its missing its butt cap, but the handle is beautiful. the ealy, I do like it, it is thicker than I thought it would be and much more of a workhorse. I am extremely happy with the handle work that Del does. It is beautiful.

How is the Harner? I passed it up but I'd love to spend some time with it!

I was up in Venice last week and stopped into JKI and Jon was nice enough to give me a finger stone to try. The finish it leaves on my carter and my shig is pretty amazing! Thanks again Jon!

kiridashi can be used for whatever purpose you want. its a little single bevel utility knife basically. I use mine for a paring knife sometimes but mostly to cut open cryovac bags and boxes and stuff. really cool and handy little knife to have around.

I was actually looking at them as a box cutter at work, wonder how well the edge would hold up actually cutting cardboard down

the beautiful thing about it is that it is insanely easy to sharpen. being a single bevel with no curve or anything. you just put it flat on the stone and goto town for a minute and its insanely sharp. most japanese ones are carbon but the one i got from del is stainless and i cut about 40 bags a day with it and i sharpen it maybe once a week.
