    At long last, I finally got sourdough bread to work. The loaves needed a full overnight second rise, but they came through.

    Looks great! With sourdough, if you rely wholly on the natural yeasts, it can take longer to rise for sure. If you want a fast rise, you can add some instant yeast. Typically with sourdough, the longer the rise, your flavors will be more pronounced.

    Bieniek, as for apple pie, I always use twice as much as my pie plate will hold! Round 'em up nice and high, tuck and fold the edges of the crust. Make a little drip tray out of foil to catch any stray drippings though!

    Pierre, the thing was, I wasnt entirely convinced to put raw apples in the pastry - allergy to sogginess. Baked the base first.
    SO I fried the marmalade first....

    But next time I will be brave and will go for it !!

    To strengthen the sourdough, just feed it one extra time.

    Me too! I never pre-cook the apples. McIntosh are my favorites

    Bob pass it here when you finally get done with it....

    I have some really good bakeries near me and that has kept me out of even attempting to bake. Recently the German place that had real honest to goodness Rye bread closed down unexpectedly I am heartbroken.

    There is nothing like a good rye. Too many classic sandwiches depend on it. My condolences, Jim.
