San Mai Gyuto, Cottonwood and Blue#2

    Hey guys. I just finished the last prototype HHH Gyuto. and wanted to share some photos. This one is my standard blade style with the new handle shape. Blade on this one is approx 220mm. Blue#2 and stainless san mai, hardened to a RC of 63/64
    Handle is Stabilized curly cottonwood. with my liner set up in Black and copper.

    I have been testing and working on this new handle design, Paired with a new blade profile and grind and plan to offer a PRE BUY by the 4th of July on my web site. I will also be offering a matching pairing knife and will do at least a couple of petty's too! For more info and details visit my available knives page by following the link in signature line.     Randy, you are having too much fun! The blade shape, taper and overall appearance look great. The handle looks nice too, although a mite busy for my tastes. Would like to hear from a tester about the comfort, as I do not have experience with handles of this shape (but I have heard Don's are very comfortable).

    Of course I can always try it out when you come to the ECG in May, right? (nudge) (nudge) :)

    :) Dave, Thanks for the comment. This handle style is sleek and comfortable. Its much different then Dons, Yet does share some similarity's.
    If I may ask. What about this is to "busy" is it the shape, the wood? the spacers? etc. etc..?

    Chef, Yes sir. This new profile lends itself to just that. "Work horse/Prep monster!!" With a touch more belly as well as a little more heel height. Add a slightly thicker spine/blade with a touch more convexity. And Its sure to please!

    I am working on profiling the actual PRE BUY blades and will take some pictures and share specs as soon as tomorrow. I have finalized the price for the Gyuto and the paring knife and also have a set price if you get both blades. This info is on my web site now. And I hope to officially post a info thread on the forums tomorrow. Again with some photos and specs like Blade height at the heel. etc.

    Randy: yes, it's the spacers. I'd be more partial to all-black. To me, the blade is the star and I would prefer the handle a little bit more in the background. I really like the wood you used, but the rivets are already commanding enough that adding the colored spacers detracts from the overall look for me. Plus the spacers compete a bit with the rivets, and are waging a geometry war that rattles the technical side of my brain :argo

    Thanks guys. This one finally made it to its new home and I got a first report that the new owner is VERY PLEASED. So m,uch so he now wants to start talking about a custom in damascus same style blade and handle! So Im thinking he likes the feel and way this new profile and handle work! :) More to come after he has had a chance to use it for a few weeks.

    I'd be very curious to see how this style operates. Sounds fantastic with the workhorse/Kato style grind mentioned on your site. Any plan on a 240mm as well?
