Kitchen Acquisitions

    I've been using one for a couple of years now. They cook food about 3-4 times faster then standard pressure. It took a bit of digging to figure out why. It's because increasing the pressure increases the temperature at which water boils....and this includes the water inside the food....if not for the later fact, it would just be a 240F oven. :)

    Got a new krups burr grinder. The Cuisinart that I've had for five years died. The krups is much nicer :)

    Just got a shiny Magimix Pâtissier. I have been considering a stand mixer for a while, and recent restart in baking piques my interest in getting one up. Down here eBay has 20% off father's day code for a few participating stores, and I just found this Magimix Pâtissier on one of the store. Besides the usual food processor that Magimix is famous for, it also claims to do dough kneeding very well. So, here it goes.

    Yes, sir. Ms. Lucretia uses a bread razor as well. Many people use disposable blade for their lame, why not a straight for knife nuts.

    Summer is almost officially here, but last Friday it was 41*c (106*f) here in Sydney. So, it is time for some cool desert.

    Great toys. Never heard of Magimix, is that an Aussie company? Myself, I tried to lay low a bit with spending for a while, but I backed a Kickstarter 'Meater' meat thermometer a while ago that will hopefully show up eventually - a gizmo that communicates with my phone when the meat is done, couldn't resist. And today I almost made it through Black Friday without shopping, until Amazon had an Instant Pot on sale for $79 shipped. I have a regular pressure cooker, but this thing gets such rave reviews, that I had my eyes on it for a while. Sorry, no pictures, yet, I will be moving soon and had them shipped to my new address, I will open them under the Christmas tree...

    Stefan, Magimix is a french company, robot coupe if you wish. Robot coupe is their industrial side, while Magimix is domestic.
     
  16. Sorry for the terrible pic. This is a baking steel by a company called Dough Joe: 15 X 15 X 1/2" and weighing in at 33 pounds. Takes a looooooong time to heat up, of course, but blazes through pizzas and breads like nobody's business and of course helps stabilize the temp in my creaky gas oven.

  18. Beast is exactly right, schanop. After breaking my third pizza stone, I decided I needed something a bit more substantial. So far the rack is bowed (it bends even more if the steel sits dead center, which is why it's off to the side) but holding...
