Wide bevel sujihiki

    Well ladies and gentlemen, slowly I am chipping away my customs list . This knife was commissioned earlier this year for a talented fellow chef and I just managed to finish it . It is 265mm sujihiki in Aebl that is ground similar to the some Sakai knives with big wide bevels .

    I have tried to capture the grind from the reflections to give better idea about the geometry.

    The handle is octagonal, African Blackwood, nickel spacer and blond buffalo horn

    This is looking freaking awesome Mert.

    From afar 200km or so, its finish looks like it is in the same vein of a Kono wide bevel honyaki mirror finish I have. Wide bevel grind is there, but the harsh transition line is blended from polishing.

    Thanks Chanop, I really like the looks of those of those honyakis , maybe I should do one too . I have seen few of them with the bevels polished less grit than mirror too , I didn't intend to have a mirror polish but even at 1500 grit Aebl gets pretty shiny

    Thanks Mike , this grind makes the knife more like ambidextrous ( I am thinking about lefties too :D especially in a suji where you may cut away from you and towards your self for cleaning large items the grind shines because there is no steering towards any direction
