250mm wa gyuto forged from hitachi blue2

    I get asked a lot "how do I find time" to make all of these knives along with running a successful kitchen. First of all spending time with Bill Burke , Randy Haas, Keith Fludder helped me a lot and allowed me to work in an efficient manner . Each knife taking 10-20hours also meant making me sacrifices from my sleep , my family time and my days off . I have spend all of my days off in shed grinding or in carport forging . I have shopped for local hardwood when on vacations , watched natural geographic with all different eyes "look at those tusks , horns ..." As bukowski said : my dear , find what you love and let it kill you ...
    It hasn't killed me just yet , last one from this weeks efforts

    Seconding Anton's comment. I don't know how to describe it but when the blade exits the handle it looks right to me when the reveal is equal on the top and the bottom. this one is lustworthy Mert!!
