If you wanted to treat yourself with 'unreasonable' kitchen gear?

    Pretty much this question, if you want to treat yourself to some new gear that is either very expensive, overkill, etc. what would it be?
    I have been thinking about it and I came up with these:

    - Thermomix or other alternative: maybe not so unreasonable as I think I would use it quite a bit
    - High end gelato machine: one of those semi-professional ones you would see in a restaurant, no specific model in mind yet
    - Pacojet: now we're really entering in the unreasonable part :) It's an expensive piece of kit, but I find the idea of having instant sorbet and gelato available in reasonable portions really alluring, has also other interesting applications. Very likely overkill in a home kitchen
    - Blast Chiller: This tool seems so much fun to use, so many possibilities, but so expensive... I don't think it would ever be used at its full potential in a home kitchen, but still seems so much fun to play with :)

    That's all I have for now, what about you guys?

    Very curious to hear in what pro gears you pros love to use!

    I want a Staub vertical chicken roaster. I'm probably going to just get a cheap one to try the method, but I really want that Staub.

  8. Not at all, just get a woman, who CAN cook. :)

    As for me a smaller sized Rational combi-oven would be great.
    An old Hobart mixer, so i could mix multiple batches of bread dough, cake mix, etc.

  13. la marzocco espresso machine and a mazzer grinder.
    i've tried and tired to get into coffee but it makes me feel like crap and espresso totally agrees w me, but damn do i tire of going down the block and dropping $4 on a cappuccino.

    its all getto but i have loved my arropress for for years (im on my 2nd ) i also hand grind my beans every morning in a hand crank mill tho... and i get my beans for the town down the road that are freashly roasted (im jsut a cheap ass when it comes to gear

    A commercial chamber vac, a 12 quart hobart mixer (or an equivalent commercial mixer), LN2 Dewar for making ice cream (this may happen for different reasons), and a temperature and humidity controlled walk-in pantry.

    that root cellar pantry sounds great as we dont have a basement. LN tanks are nto cheap nor is the fill but for me its a must and i need to make anothe batch of icecream on the next load
     
  17. Wood-fired Masonry Oven with offset BBQ chamber to re-use the heat/smoke. However, if I was limited to adding one thing to my kitchen, it would be 150 sqft of additional space.

    Thread starter I dont really see the point of having commercial grade ice cream maker and a pacojet. At home Id rather have the Pacman. Why is that?
    Cause the storage of both containers and machine is easy, its light, works fast, and you get the serving temperature straight away.
    Only problem is washing, kind of boring to do that after mixing two portions of ice or something. But youd have to wash the ice cream maker too.

    Blast chiller Im not sure why you want that, Id rather have ice machine and chamber vac.
    There is virtually nothing you cant chill quickly, or freeze, in ice and salt solution.
    One more thing - fridges with glass door and fans to move the air inside.

    You sir are absolutely right. I would add epoxy floor or the rubber carpeting with high skirting.

    If I had the money Id rather do with Synesso :) But some huge conical Mazzer of the kind grinding a double in couple of seconds yes please
    My kitchen is 9m2 and still I have a huge Carimali EtaBeta v2 and Rossi RR45 standing in the middle of the chaos. The roastery is 10 mins away should one choose to walk.
    Can't see anything unreasonable with good coffee.

    Oven yes.

    Person no. But a fast 5 minute machine would be fine.
     
  20. You'd be surprised how cheap you can get espresso gear on Craigslist. I have a HX and a mazzer Kony for sub 1k from CL.
