How Do You Get Eggs To Not Stick In Stainless Pan

    Ive tried a few tricks short of spicing the pan, ive tried more heat, as well as less heat, always with butter. tried to make a couple of omelettes but the center is still sticking and wont let me slide it out of the pan, it keeps breaking apart on me. Ive only ever done eggs in non stick, or cast iron, not so used to these stainless guys.
     
  2. yeah - i've never had much luck except i've found more heat (almost to the oil's smoke point) is better. in the use of butter this would brown it which you probably don't want. try a neutral high temp oil like grapeseed.

    I'm just getting into stainless myself. From what I've read, you want to preheat the empty pan until when you dribble water on the hot pan the water forms beads and dances across the pan. If it just sits there and evaporates, the pan isn't hot enough. Then add your fat, reduce heat, and cook your eggs. My SS pan was more "nonstick" than my nonstick pan has been for many, many years. Acted a lot like this guy's eggs:

    the way that guy did his is almost exactly how i was trying.... it must be a heat thing,... I'll have to try the water beed test next time

    Wait until the butter foams before adding your eggs.

    Meh, not worth the hassle. Keep a non stick egg pan on hand and save the headache.

    My father has "his egg pan".

    A small 6" (or maybe 4.5") non-stick pan he has specifically for cooking eggs.

    Me... cast iron grill plate... best all around, eggs, bacon, pancakes.... whatever

    I use a DeBuyer blue steel crepe pan for eggs. Pretty much perfect every time, with oil. Hot pan, then add oil, blah blah.
     
  16. Seasoned wok for me. Pretty much nothing ever sticks.
     
  17. go korean style - just crack a raw egg into whatever hot food you're eating.
    clean ups a breeze...
