BBQ The thin blue smoke of tastyness

    By the way - I didn't know offset's came with the giant fireplace poker option - I need to check that box next time :D

    It's the special SmarTass whacking tool. :D

    Actually, we used to have a wood fireplace, now we have gas (no comments from the peanut gallery.) The old tools for wood are pretty good for poking around in the firebox.
     
  5. Nice looking pork butts. You will have a late night tonight. Nothing beats snacking on BBQ bark in the middle of the night. :)

    Another bark man here I see. I just discovered it last year. I mean, I've been eating BBQ forever but I haven't been eating BBQ until I moved to TN and found some really amazing stuff. BBQ that is simply served on top of a slice of bread. Getting down to that slice of bread that's holding all those tasty juices and sauce...yum!

    But the bark when i had my first real taste...it's like jerky! and I love it!

    Actually not a late night at all. I put them on the smoker for 6 hours, and they come off looking like this:

    They're in a covered roasting pan, and into a 200-210 degree F oven for 20-24 hours. Then they come out and rest for an hour (still covered) before pulling the pork.

    We were pushing 70 degrees today. Probably close to 20 degrees above normal. Insane weather. The mountains to our west are already considered to be in a state of drought. Need to smoke a bunch of pork before burn bans go into effect.

    Lucretia, you cannot use an enclosed grill if there is a drought, that's harsh.

    NO way I'm not enjoying smokey goodness. That's probably one of the bans I'd kick the Bulldog on.

    Don't know if they'd actually ban grills. We've been here 9 years and never seen a drought declared, and have seen it dry enough that I wouldn't want to use a grill without soaking down the yard. And watering bans ARE likely to be in place. Snowpack (our water source) is only about 28% of normal this year--could be a rough ride. And just in case they do ban grills, I want to be prepared!

    I'm with Lucretia in that we have a drought going on with less than expected snow levels (27%) last measurement. Thankfully, it's a desert here, and fire bans are only in affect when you get to the forest. Doesn't hurt having extra BBQ on hand though, as it has tons of uses, and if you don't have a few days to get it ready, it's always useful to pull out a package from the freezer to use for whatever you have planned.

    Lucretia, your butts always amaze me!

    An added benefit of smoking meat, is that you smell like it! They should seriously invent a cologne or perfume that smells like it, since my g/f tends to snuggle in to me after I've been at the BBQ all day.
