Need a good recipe for lamb shanks

Discussion in 'Food and Drink' started by WarrenB, Feb 17, 2015.

  1. I know it's boring but if you add a bit of braised red cabbage... Or any nicely (not over) cooked veg just for the sake of having a bit veg on the plate as well. :)
Or you could leave the gravy a bit chunky leaving the mirepoix in and just thicken it.
Oven roasted apples could go with it as well.
Add cooked lentils / beans or barley and slow cook it in the oven (or slow-cooker).
Could jazz it up with some ras el hanout if you like moroccan and make some cous-cous with some dried fruits and toasted almonds.
    Variations are endless. :)

  2. I normally add veg of some kind to most dishes but the Mrs just likes the lamb shank and mash so left it like that on this occasion. Oven roast apples sounds interesting!

  3. Nice work Warren - you nailed it!

  4. Thanks! I have only really been in to my cooking for the last year, learning all the time and trying to get the basics down. Today was the first time I really got the whole reduction thing, the flavour intensified beautifully:)

That's great -- the reduction is an important technique to know. And congrats for really tackling cooking this past year. The nice thing about the knife fora is there is lots of great food/ cooking knowledge. Nothing better than home cooks being able to get tips form the pros!

  7. The reduction yesterday was a bit of a 'eureka' moment, I was tasting regularly as it was reducing and the way the flavour changed/intensified was incredible! Great wealth on knowledge on here and people willing to share it:)
