Bought some Swordfish steaks, now what?

  1. We picked up a couple of nice thick Swordfish steaks at the supermarket, never had it before so would like some suggestions on how to cook it.
    I was thinking just pan seared with maybe a quick peppercorn/chilli flake crust that I like on other fish, or maybe something citrus and fresh?

    Mmm salt pepper lemon and some fire. A few moments on each side on the well oiled BBQ and you will be in heaven. Swordfish has lots of flavor so you don't want to mask it with a lot of other spices. If it is really thick you can finish in a hot oven. OH I just happen to have a photo...

  3. Well despite the lack of BBQ or even a garden for that matter, it turned out pretty good.
    Did a quick peppercorn and lemon rub with a few chili flakes mixed in, couple of minutes each side and done, just a simple buttery mash and char grilled asparagus. Really enjoyed the fish, has a firm texture and nice flavour

    I love swordfish! I grill almost all of my fish. The simpler the preparation the better in my opinon.

    I'm a fan of ginger and lime with my swordfish but still easy and simple in prep! I carved up two #35 pound sections of loin into 8oz block cuts. Wish I took more photos at work... They took up most of my butcher table :)

    I would eat that :) So easy to have this end up dry and chewy, but when done well it's a treat.

    Salt the fish and cover in cracked black pepper, sear in a hot pan in a little butter, deglaze with a splash of cognac or brandy, add a touch of heavy cream and reduce. Simple.

    My god, that sounds good. I really like heavily covered black pepper foods.
