BBQ The thin blue smoke of tastyness

    Getting ready for 2morrow. Based on previous cooks this shoulder will be ready to come off and go in cooler about 1:00 tomorrow. Couple racks of ribs will go on in morning.

    I built a 2x4 and plywood "garage" to park the smoker under when it's raining. Taxed my woodworking ability to the max.

    Jim - salt and pepper ribs - tell me more. I always end up doing rubs on my smoked meat, and I want to try ribs a bit more au naturale.

    Not much to report... a liberal application of salt and pepper and the smoke does the rest. I do a brisket like this once in a while also.

    This really lets the meat do the talking.

    Im not the BBQer here but someone I know. I got a nice sample plate of ribs and pork steaks. 30 pork butts.
    I think we need a bigger grill.
